The island's deepest cellar
Cut into the foundation stone and kept at cellar temperature by the river itself, the vault holds the state's deepest Tasmanian pinot noir library alongside grower Champagne, museum releases and single-cask island whisky.
Chief sommelier Élodie Marchand hosts tastings at the stone table for eight — six pours built around a theme, ending with a vintage chosen from the locked cabinet.
